Sabudana Khichdi Recipe
Sabudana khichadi is an Indian dish made from soaked Sabudana . It is available as street food and is widely eaten throughout the year. When you think of what you can eat during a fast the first thing that pops into the mind is definitely sabudana khichdi. It is the dish of choice when an individual observes a "fast" during Shivratri, Navratri, or a similar Hindu religious. Sabudana is soaked for a while, and is then fried with cumin seeds, salt, red chili powder, green chilies, diced potatoes and other optional ingredients such as fried peanuts.

Sabudana is nearly pure carbohydrate and has very little protein, vitamins, or minerals. The addition of peanuts to sabudana khichadi adds to the protein content, making it a more balanced meal. It has a high calorific content, due to the quantity of starch and fat present.
I have learnt how to make this delicious khichdi from my mother and it turns out amazing every time. Here is the recipe for making perfect non sticky sabudane k khichdi .
Ingredients
- 2 cups Sabudana before soaking
- 2 cups water
- 2tablespoon oil or Ghee
- 2 tablespoon cumin seeds
- 1 Black Cardamom(Badi Elaichi)
- 2-3
Cloves(Laung)
- 6-7 Peppercorns(Kali
Mirch)
- 1 green chilly finely chopped
- 2 medium sized potatoes peeled and cubed
- 3/4 cup peanuts
- Salt to taste ( sendha namak for upvaas )
- 1 tablespoon Lemon juice
- Chopped Corander Leaves
Method:
- Place Sabudana in a colander .Wash
Sabudana under cold tap water until clear water appears. This takes off most of
the starch and prevents sticking.
- In a big wide bowl soak sabudana by
adding just enough water to cover them . Just ¼ inch more than sabudana level.
- Soak covered for 5-6 hours ,
preferably overnight.
- Sabudana will fluff up after soaking .
Drain off excess water if any before cooking.
- Heat the Pan and add 2 tbsp.cumin
seeds,1/2 cup peanuts,1 Black Cardamom,5-6 black pepper, 2 laung and roast them
and keep aside .After 5 minute put all the ingredient in a Grinder and grind to
a rough paste.
- Add oil to a heavy bottom pan . Once
warm , add cumin seeds,chopped green chilly,peanuts and Add in the cubed
potatoes and cook on a low flame until tender , flipping it occasionally.
- Now add sabudana,salt,red chilly
powder(if required) and cook for a minute more.
- After 1 minute add Roasted mixture,
lemon juice,coriander leaves and mix well properly.
