Gajar, Aloo, Matar, Gobhi, ki Sabji Recipe
Everyday almost every Indian
family cooks a balanced diet which is rich in all the necessary & essential
nutrition. The sabzi or curry, a kind of bread (roti / chapati / phulka), rice
and a lentil. This balance diet is base of Indian cooking especially for
vegetarians. The sabzi preparation is almost similar everyday, just the
vegetable used in sabzi differs. There are many curry recipes that are cooked
daily in an Indian house hold.Today I am going to share
gajar(carrot),aloo(potato),matar(grean peas),gobhi(cauliflower) ki sabji. . I
have learned this recipe from my mother.As its name suggest, this
curry is made from cauliflower, potato ,carrot and green peas. All the
ingredients are available in almost all the grocery stores. Also as this is a
regular sabzi we use minimum spices to cook.
- Potatoes-3 medium size(cut into small pieces)
- Green peas -1-Cup (100 gram)
- Onion -1(chopped)Carrot-1cup(chopped)
- Tomato-3 Medium size (chopped)
- Cauliflower-250 gram(cut into small pieces)
- Ginger grated-1 tsp
- Garlic Cloves--5(chopped)
- Green Chilly-1 (chopped)
- Dry red chilly-1
- Salt-As required
- Mustered Oil-3 Tbsp.
- Turmeric powder-1/4 tsp.
- Coriander Powder-1 tsp
- Sabji Masala-1tsp.
- Rasam Powder-2 tsp(optional)
- Garam Masala-1 tsp
- Red chilly Powder-1/2 tsp
- Corander Leaves-1 cup(chopped)
- Cumin-1/4 tsp.
Method:
- Turn on the flame and heat the pan or folk.
Add oil and let it heat properly.
- Add cumin seeds, Dried red chilly, green chilly(chopped),ginger, garlic and fry it for few seconds.
- Add chopped onion and fry it for 2-3 minutes on medium flame.
- Add potato, fry it and cover it for 1 minute.(Because if we fry potato first for one minute then potato will be more crispy)
- After one minute add turmeric powder and mix well.Now add grean peas,carrot and fry it for a minute.
- Add cauliflower,coriander powder,salt, red chilly powder,sabji masala,and rasam powder(optional),mix properly and cover the pan and cook it for 3-4 minutes on low flame.
- Open the lid ,stir it and add chopped tomato and cover the pan and cook it for another 2 minutes on low flame.
- Open the lid and stir it ,Add garam masala and mix it.Check if wether the vegetables are cooked or not,if not then cook it for more 3-4 minutes.
