French fry
French fries are served hot, either soft or crispy, and are
generally eaten as part of lunch or dinner or by themselves as a snack, and
they commonly appear on the menus of fast food restaurants. Fries in America
are generally salted and are often served with ketchup; in many countries they
are topped instead with other condiments or toppings, including vinegar,
mayonnaise, or other local specialities.

Medium size potato-2-3

Salt-as required

Black pepper-1/4 tsp.

Chat masala-1/4 tsp.

Oil-for frying

How to prepare it.
1.
Peel and rinse the potatoes. Cut each potato lengthwise into 4
or 5 pieces, and then cut each piece into sticks.
2.
Place the fries in a large bowl. Cover with cold water, and then
allow them to soak 15-20 minute.
3.
Drain them out from water in a colander.
4.
Take some water in a vessel and turn on the flame add 1 tsp.
salt to the water , when you see gentle boil in water ,drop the French fries
into it.

After 4- 5 minute check the fries, make sure that they get little
tender. Press them a little with your nail to check if they turned soft. Then
turn off the flame and drain them out from water in a colander.

Spread then over a cloth and dry them up, wipe them thoroughly
with the cloth.
7.
Transfer the French fries to a bowl and cover the bowl and place
them in freezer in 1 hour so they cool down completely. This helps in making
crispy fries. Now place them in freezer for up to an hour to set and then fry.
8.
The oil is rightly hot now drop the French fries in oil to deep
fry till they get little brown.
9.
Drain out the French fries; let the fries cool down under fan
for 15-20 minutes. The fries have cooled down and now we will re-fry them till
crispy.
10.
The oil is rightly heated in the wok, now drop the fries and fry
till they get golden brown .keep the flame high.
11.
Drain out the fried golden brown French fries in fresh paper towel.
Sprinkle some pepper and chat masala over the French fries and mix well.
12.
Serve these tempting French-fries with Tomato Ketchup.
