Cutlet Recipe
Vegetable cutlet is a very popular
and simple snack item. It is very easy to make and can be had as an appetiser
or light afternoon snack or evening snack with tea. It is great for small
parties and gets together. Today we will learn how to make Vegetable cutlet
following this easy recipe.
Ingredients for vegetable cutlet.

Potato - 3 medium size boiled and mashed.
2.
Carrot - 1/2 cup grated.
3.
Onion -1chopped.
4.
Green chilli -1 finely chopped.
5.
Ginger-1/2 tsp grated.
7.
Chilli powder - 1/2 tsp.
8.
Soaked Saabudana- ½ cup.
9.
Coriander leaves-chopped.
10.
Soaked Bread –5 slices.

Salt-As required.

Oil for shallow frying.

Method for preparing vegetable cutlet.
1.
Boiled the potatoes until they are tender, once cooked,
drain the water and let the potatoes cool down.
2. Soak saabudana in a bowl for 4 to 5 hours.
3. Roast the peanuts and thick grind it in mixer.
4. Peel the skin off and mash the potatoes.
5.
Add chopped onion, chilly, coriander leaves,
grated carrot, bread slices (soaked in water), soaked (in water) saabudana, grind peanuts, ginger,
jeera powder.
6.
Mix all the ingredients together; adjust salt to
your taste.
7.
With oiled hands, divide the mixture into equal parts.

Shape into flat round (about ½ inch thick) or
cylindrical patties.

Frying pan should have at least 1 1/2 inch of
oil. To check if the oil is ready, put one drop of batter in the oil, the
batter should come up right away.
12.
Fry cutlets at a time until they are
golden-brown on both sides.
13.
Repeat this until all the cutlets are done.
Serve hot with green chutney or tomato ketchup.
