Mango Galka(Sweet
And Sour Mango Pickle) Recipe
Galka
is a traditional North Indian mango pickle. when I was a little girl my mother used to
make this pickle. Since in today’s world everybody is busy, this is a quick and
modified version of my mothers pickle recipe, which gets the Galka ready in
15-20 minutes. Try this galka recipe. My
kid loves it .And I am sure your kids will love this .So you have to try this recipe before mango season ends and here it
is.
Method:

Cut
the raw mango in small slices. I prefer the typical green raw mangoes.

Take
oil in a pan and heat it on high flame. Once hot, switch the flame to low and
add jeera(cumin seeds),fenugreek seeds,kalonji,hing,turmeric powder and dry red
chilly and let them splutter.

Now
add the mango cubes to it and mix well.
·
Add
red chilly powder and salt and cover the pan for 5-7 minutes, keeping the flame
on low.

By
this time, the raw mango cubes would be optimally cooked; if you feel they are
still not soft, cook for 2-3 minutes more, adding 1 tsp of water.

At
last, add jaggery to it and mix well.
·
Put
off the heat and let it cool.
·
Enjoy
this with Parantha or any snacks.This can be stored in the refrigerator for 3-4
days.
