Salted Crackers(Mathri)Recipe
Mathri (salted crackers) is a Rajasthani
snack. It is a kind of flaky biscuit from north-west region of India. It is
made from flour, water,ghee and carom seeds . The creation of this snack was
influenced by the need to have preserved food that will stay edible for days
and the finished products are often
stored in big jars at room temperature.
Mathri is served with mango, chilli or lemon pickle along
with tea. It is also served at marriages and poojas.
It is one of the most popular snacks in North India. We make
mathri for almost all festival like Karwa Chauth, Diwali and Holi. It can be
stored at room temperature up to two weeks.
Ingredients:

· · All purpose flour(maida)- 2 cup
· · Curd-1 tbsp
· · Carom seeds(ajwain)-1tsp.
· · salt - to taste
· · Ghee-2tbsp.
· · Water- to knead the dough
· · Oil- for frying
Method:

In a bowl, add all purpose flour, curd,ghee,
carom seeds,salt and mix well.
·
Add little water gradually and as required and
knead into a thick dough.The dough should not be soft,but a little tight and
hard .

Set it aside for 15-20 minutes.
· Divide the dough into about 4 equal parts.
· Take one dough and roll into cylindrical shape in rolling board and cut into 10-12 equal parts with the help of knife.
· Take each part of the dough and make a flat ball shape. Roll them into 2 inch circles.
· Make holes into the disc with the help of a knife or fork.So the mathris do not puff when frying.
· Heat the oil in a frying pan on medium heat.
· The frying pan should have atleast 1 1/2 inch of oil.To check if the oil is ready, put a small piece of dough in the oil. The dough should make the oil sizzle and come up slowly.
· Fry a few matris at a time. Make sure to place just enough mathris to cover the frying oil.
· Fry them until they turn slight yellow color on medium to low heat.( If the mathris are cooked on high heat, they will be soft)
· Remove them from oil and place them on a tissue paper.
· Serve them with tea.
