Baingan Bharta
Recipe

We simply love this recipe in its
simplicity and taste. I have learned this recipe from my mother-in-law who
cooks excellent food.

Coriander leaves chopped

Salt as required.

¼ teaspoon black pepper

1 large brinjal (500gm.)

2 medium onion, finely chopped, about ½ cup
finely chopped onion

2 medium tomatoes, finely chopped, about 1 cup finely
chopped tomatoes

5 to 6 medium garlic cloves, finely chopped,

1 green chili/hari mirch, chopped

3 tbsp musterd oil
12.
1 tbsp chopped coriander leaves/dhania patta.

Salt as required.

ginger 5 gram,chopped
15.
¼ teaspoon garam masala
How to prepare it.
1.
Heat the mustard oil (3 table spoon) in a pan
and add the cumin seeds.
2. When the seeds crackle, add garlic, ginger and the chopped green chilli. Saute for 1 minute.
3. Add the onions and sauté till light brown.

After 5 minutes, open the cover and add chopped
brinjal, kashmeeri mirch powder, salt mix well, cover it (10-15min.) and cook
on a slow flame till the brinjal are cooked.

After 10-15 minutes, when brinjal are cooked add
¼ teaspoon of garam masala,coriander leaves and mix well.
7.
Serve hot garnished with coriander leaves.
