Baingan Bharta

Baigan Bharta is a very popular north Indian curry. Bharta means mashed. It can be served at lunch with hot chapattis and daal. There are many ways to make baigan ka bharta but this version of baigan ka bharta is really easy to make. Baigan bharta is my husband's favourite. When I cook baigan bharta at that day he eats more chappatis.
We simply love this recipe in its
simplicity and taste. I have learned this recipe from my mother-in-law who
cooks excellent food.
Ingredients for baingan bharta.

Coriander leaves chopped

Salt as required.

¼ teaspoon black pepper

1 large brinjal (500gm.)

2 medium onion, finely chopped, about ½ cup
finely chopped onion

2 medium tomatoes, finely chopped, about 1 cup finely
chopped tomatoes

5 to 6 medium garlic cloves, finely chopped,

1 green chili/hari mirch, chopped

3 tbsp musterd oil
12.
1 tbsp chopped coriander leaves/dhania patta.

Salt as required.

ginger 5 gram,chopped
15.
¼ teaspoon garam masala
How to prepare it.
1.
Heat the mustard oil (3 table spoon) in a pan
and add the cumin seeds.
2. When the seeds crackle, add garlic, ginger and the chopped green chilli. Saute for 1 minute.
3. Add the onions and sauté till light brown.

After 5 minutes, open the cover and add chopped
brinjal, kashmeeri mirch powder, salt mix well, cover it (10-15min.) and cook
on a slow flame till the brinjal are cooked.

After 10-15 minutes, when brinjal are cooked add
¼ teaspoon of garam masala,coriander leaves and mix well.
7.
Serve hot garnished with coriander leaves.
